Enriched Muffins Recipe

Ingredients
1 egg
1/4 cup margarine, softened
1/2 cup sugar
1/4 cup grape juice
1/4 cup half-and-half
1 cup self-rising flour
1/2 cup bran
1/4 teaspoon baking soda
1/2 cup dried cranberries
Instructions
Preheat oven to 400 degrees. Using an electric mixer, blend egg, margarine, and sugar in a bowl. Mix in grape juice and half-and-half. Combine flour, bran, and baking soda. Mix with cranberries and stir in to egg mixture. Put in a greased muffin pan and bake about 12 minutes. Makes 12 muffins.

Tips From Our Test Kitchen: White grape juice may be substituted for purple. To cut calories, use skim milk in place of the half-and-half. If desired, sprinkle muffins with bran cereal before baking.
