We love bell peppers from our garden and I decided to dress up our mashed potatoes with sauteed peppers and onions. Great flavor ... very colorful! This has become a favorite!
Ingredients
2 medium russet potatoes
4-6 red skinned potatoes
1 clove garlic, chopped
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 orange bell pepper, sliced
1/2 green bell pepper, sliced
1 medium onion, sliced
1 Tbsp Light Olive Oil
1/2 cup sour cream
1/2 stick butter
1/2 cup shredded cheddar & jack cheese
salt and pepper to taste
Instructions
4-6 red skinned potatoes

1/2 orange bell pepper, sliced
1/2 green bell pepper, sliced
1 medium onion, sliced
1 Tbsp Light Olive Oil
1/2 cup sour cream
1/2 stick butter
1/2 cup shredded cheddar & jack cheese
salt and pepper to taste
1. Scrub potatoes thoroughly and cut into cubes, leaving skin on.
2. Cook potatoes until done, adding garlic last few minutes.
3. While potatoes are cooking, saute bell peppers and onions in olive oil until tender, stirring to cook evenly.
4. Drain potatoes.
5. Add salt, pepper, sour cream and butter and mash the potatoes.
6. Serve sauteed peppers & onions and the shredded cheese on the side to top off the potatoes.
