Almost Heaven Ham Salad Recipe

My West Virginia Grandmother used to make it for me when I was growing up. We all liked it, and she would even make it for Church events where it was eagerly consumed. I learned to make it from the time I could turn the crank on her food grinder and made my first batch when I was 6, all on my own. Not bad for a boy in Grannies kitchen !

Most of the seasonings are in the meat already and there is little to do besides processing, grinding, and adding ingredients for this tasty comfort food that can always be kept on hand. The luncheon meat is made largely of pork shoulder.

Ingredients
1 can of Luncheon Meat such as Spam, Treat, or generic.

1/2 a green bell pepper seeded cleaned and sliced into strips

2 heaping TB Sweet Pickle Relish

2 heaping TB Salad Dressing to taste

2 hard cooked eggs optional

Dash garlic powder

1 tsp horseradish optional (you probably won't know it's in there)

1 tsp seasoning salt

1 tsp celery seed optional

1/2 tsp pepper
Instructions
Open Luncheon Meat Can and place meat on plate and cut into about 6 or 7
slices.

Feed the slices thru the meat grinder using the fine grate and catch the
ground meat in a mixing bowl.

next install the coarse grate on the grinder and grind the pepper

next grind the hard cooked eggs if you want them in the salad

then add Sweet Pickle Relish and salad dressing

then add the seasonings to your own taste.

stir and blend well and refrigerate for a few hours. This will make about 4 cups of salad and a you can use as much as needed to make a sandwich or stuff into a tomato. It goes good on savory crackers for
cocktail tid bits too with a sliced olive on top. But best of all the
cheap canned luncheon loaf is as good as the expensive name brand so it's as affordable as you want to make it.
