Mississippi Caviar Recipe
With its sprightly, fresh taste, this salsa is perfect with chips or as a side to chicken, beef or eggs.
Ingredients
1 (15-ounce) can black-eye peas, drained
1 (15-ounce) can black beans, drained
1 (15-ounce) can whole kernel corn, drained
2 large tomatoes, seeded and diced
1 medium onion, diced
1 medium green bell pepper, diced
3 tablespoons minced garlic (about 8 cloves)
1/2 bunch cilantro, chopped (about 1/2 cup)
1 jalapeño pepper, seeded and finely chopped
Juice of 1 lime
1 teaspoon Italian seasoning
1 (.7-ounce) package dry Italian dressing mix (such as Good Seasons)
1/2 cup extra-virgin olive oil
1/2 cup vinegar
Instructions
1. Combine first 11 ingredients (peas through seasoning) in a large bowl. Stir well.
2. Combine dressing mix, oil and vinegar. Pour over pea mixture. Stir well. Chill at least 2 hours. Serve with tortilla chips. Makes about 8 cups.

Looking for a new black eyed pea recipe for New Years Day. Saw one for Black Eyed Pea Chili on this website. Has anyone tried it and how would you rate it for a New Years Day Pot Luck ?

Hi: I just checked with the Food Editor at Relish magazine (they're Spry's sister magazine that focuses on food) and she said she really loved both the Black Eyed Pea Chili and the Mississippi Caviar recipes. Go for it!

Thank you so much for checking this out for me. I've already bought all the ingredients so I could make a "test" pot ahead of time.
Also, I had already cut out the recipe for Mississippi Caviar from one of my Relish magazines.
My husband is from MS so I thought it would be an appropriate dish to take to pot luck at our friends house.
She always fixes Hoppin' John Soup for New Years so I think the Black Eyed Pea Chili and MS Caviar will be a great addition.
