Shawn's Mayonnaise Chicken Recipe

When my daughter was little, she didn't want to eat. Nothing interested her. A lady who worked for me offered the following recipe and my daughter couldn't get enough. In fact, all three of my children love the tangy taste of this chicken and now their children love it, too! Sometimes I modify it with light Miracle Whip and instead of using sugar, I use one packet of sweetner. Works well and cuts the calories. I've also cut back on the pepper since the tablespoon called for is too spicy for children.

Ingredients
4 boneless, skinless chicken breast, I cut mine into fingers.

6 Tablespoons Miracle Whip Mayo

3 Tablespoons lemon juice

1 Tablespoon each: salt, pepper, sugar

Instructions
1. Mix all ingredients together and dip pieces of chicken, coating well.

2. Place in glass oven proof dish large enough to hold all of chicken.

3. Bake covered at 350 for 45 minutes. Remove cover and cook until slightly brown.

In a hurry? Mix all ingredients in the dish you're going to cook it in and stir in chicken. Delicious!
