Quick-and-Easy Family Peanut Brittle Recipe

submitted by reader Mildred Fettig of Petoskey, MI

Ingredients
˝ cup light corn syrup
˝ cup sugar
1 cup raw peanuts
1 teaspoon baking soda
Instructions
1. Lightly butter a foil-lined baking sheet.
2. Combine the corn syrup and sugar in a 1 ˝ quart saucepan. Cook over high heat until bubbly. Add the peanuts. Cook 6 minutes exactly, stirring constantly with a wooden spoon, and taking care not to burn the mixture.
3. Remove from the heat and add the baking soda. Be careful; the mixture bubbles up when the soda is added. Stir quickly for 5 seconds.
4. Pour the mixture onto the prepared baking sheet into a very thin layer. Cool completely before breaking into pieces. Store in an airtight container.

Makes 5 cups.
