New Year's Day Brunch Blender Mini Quiches Recipe

Ingredients
2 cups shredded Swiss
½ cup half-and-half
½ cup mayonnaise
2 eggs
2 tablespoons all-purpose flour
1 cup diced ham, cooked bacon, crab, or shrimp
¼ cup diced mushrooms
¼ cup finely chopped onion
½ teaspoon seasoned salt
1/8 teaspoon black pepper



Instructions
1. Preheat the oven to 350 degrees F. Grease 12 mini-quiche cups or nonstick muffin tins.
2. Combine the Swiss, half-and-half, mayonnaise, eggs, and flour in a blender. Process until well blended.
3. Fill each quiche cup with about 2 tablespoons of the meat and pour equal amounts of the egg mixture over each. Cups will be about half full. Bake for 22 minutes, or until quiches are lightly golden and a knife inserted in the center comes out clean. Seves 4 to 6.
