Mom's Oatmeal Cake Recipe

Ingredients
Cake:
1 1/2 cups boiling water
1 cup oatmeal (old fashioned oats)
1/2 cup butter, softened
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon

Frosting:
1/2 cup butter
1/4 cup milk
1/2 cup brown sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans, lightly toasted
1/2 cup flaked coconut
Instructions
1. Preheat oven to 350F. Grease a 13-by-9-inch baking pan.
2. Pour boiling water over oatmeal in a small bowl.
Set aside. Cream butter, brown sugar, granulated sugar and eggs with an electric mixer. Add flour, baking soda, salt and cinnamon to creamed mixture alternately with oat mixture.
3. Pour into pan. Bake 25 to 30 minutes.
4. To prepare the frosting, combine butter, milk, brown sugar and vanilla in a saucepan. Bring to a boil and boil 3 to 4 minutes, stirring constantly. Add pecans and coconut. Spread over cake.

Serves 12.
