Fresh Apple Muffins Recipe

Ingredients
1 cup vegetable oil
2 cups sugar
3 cups all-purpose flour
3 eggs
1 cup chopped nuts
2 teaspoon vanilla extract
1 teaspoon salt
1 teaspoon soda
2 cups unpeeled, chopped apples
Instructions
1. Preheat oven to 350F. Lightly grease cups of muffin tins.
2. Mix together oil, sugar, flour and eggs. Stir in nuts, vanilla, salt, soda. Gently fold in apples. Fill muffin tins two-thirds full. Bake 20 to 25 minutes. Serve warm with cream cheese.
