Lemon Bars Recipe
Ingredients
2 cups, plus 4 tablespoons, all-purpose flour, divided
1 cup butter or margarine, softened
1/2 cup confectioners’ sugar
4 eggs
2 cups sugar
6 tablespoons freshly squeezed lemon juice
1 tablespoon grated lemon rind
1 teaspoon baking powder
Instructions

1/2 cup confectioners’ sugar

2 cups sugar

1 teaspoon baking powder
1. Preheat oven to 350F.
2. Combine 2 cups flour with butter and confectioner’s sugar in a 13-by-9-inch baking pan. Mix together with a fork and press firmly into bottom of pan.
3. Bake 20 to 25 minutes until lighted done but not browned.
4. Beat eggs with an mixer. Add sugar; blend well. Add lemon juice and lemon rind; beat well. Add baking powder and remaining flour; beat well. Pour over hot crust (do not let it cool). Bake 20 to 25 minutes. Sprinkle top with additional confectioners’ sugar. Makes 24 bars.
