Easy Flan or Cream Caramel (TX) Recipe
submitted by reader Nell Hull
of Paradise, TX
Ingredients
4 large eggs
1 cup whipping cream
1 (14-ounce) can sweetened condensed milk
1/2 cup whole milk
3/4 cup granulated sugar
Instructions
Preheat the oven to 350 degrees. Put the eggs, cream, condensed milk, and whole milk in a blender, but do not start. Set aside.
Cook the sugar, without stirring, in a small heavy skillet. The sugar will melt and turn amber. Cook it until it begins to “string” when a spoon or knife is dipped in. Pour the melted sugar into a 1 1/2 quart Pyrex or glass soufflé dish.
Now start the blender. When the ingredients are whipped, pour this over the melted sugar.
Place the flan dish into a larger pan that has 1-inch of water in it. Bake the flan in the water bath for about 1 hour, until the center is set. The top of the flan will have a golden and bubbly crust. (Test by inserting the blade of a knife in the center. It should come out clean.) This flan can be turned out onto a plate when it’s still warm or can be served out of the dish.

While this recipe seems very easy, it seems to missing the key ingredient.....vanilla extract. Without the vanilla, I can only assume it'll taste extremly egg-y.

The reader who submitted the recipe did not include vanilla extract, and when we tested the recipe, we thought it was fine without it. I think a teaspoon of vanilla flavoring would be nice though.
