Hawaiian Bars (MN) Recipe
Ingredients
Crust:
2 cups all-purpose flour
1 cup sugar
1 cup butter, softened
Filling:
16 ounces cream cheese, softened
6 tablespoons sugar
4 tablespoons milk
2 eggs
2 teaspoons vanilla extract
1 (16-ounce) can crushed pineapple, drained
Topping:
2 cups flaked coconut
2 tablespoons butter, melted
Instructions
2 cups all-purpose flour
1 cup sugar

Filling:

4 tablespoons milk

2 teaspoons vanilla extract
1 (16-ounce) can crushed pineapple, drained
Topping:
2 cups flaked coconut
2 tablespoons butter, melted
Preheat the oven to 350. Mix together the flour, sugar, and butter until well blended. Press into an ungreased 13 x 9-inch baking dish. Bake for 10 minutes. Set aside while making the filling.
For the filling, combine the cream cheese, sugar, milk, eggs, and vanilla in a large mixing bowl, and beat together until very smooth. Stir in the pineapple until well blended. Spoon over the crust.
For the topping, sprinkle the coconut evenly over the filling. Drizzle the butter evenly over the coconut. Bake for about 25 minutes, until the coconut is lightly browned. Cool and serve.
Yield: about 24 squares

This creamy dessert is great to freeze and keep on hand for last-minute guests.
For the filling, combine the cream cheese, sugar, milk, eggs, and vanilla in a large mixing bowl, and beat together until very smooth. Stir in the pineapple until well blended. Spoon over the crust.
