Mom's Noodles (PA) Recipe

Ingredients
12 egg yolks
4 cups all-purpose flour
2 tablespoons lard
3/4 cup cream or evaporated milk
1 1/2 teaspoon salt
1 1/2 teaspoon baking powder

Instructions
Mix the egg yolks with 3 2/3 cups of the flour. Add the lard, cream, salt, and baking powder. Roll this very elastic dough as thin as you desire for noodles on a board sprinkled with the remaining 1/3 cup of flour. Allow it to dry for a few hours, and cut it into strips of the desired width. Boil until just done. The cooking time will depend on size of the noodles.

Yield: 4 to 6 servings

These delicious noodles are perfect with any sauce. Try tossing them in a bit of olive oil, Parmesan cheese, garlic, and basil, and serve them with just a bit of butter, salt, and pepper.
