Summer Spinach Salad (SC) Recipe

Ingredients
2 pounds fresh spinach
1 ripe avocado
1/4 ripe cantaloupe
1/2 cup alfalfa sprouts
2 green onions, chopped
1/2 cup vinaigrette dressing

Instructions
Wash the spinach and pat dry. Tear into bite-sized pieces (unless using baby spinach). Peel and cut the avocado into small chunks. Peel and scoop the melon into small balls. Toss the avocado, cantaloupe, sprouts, and green onions into the spinach in a large salad bowl. Drizzle the dressing on top just before serving.

Yield: 8 to 10 servings

This salad also is good with a few raspberries or blueberries added to the summery mix.
