Baked Rice Recipe

Ingredients
2 cups uncooked instant rice
3 eggs
1 cup sugar
1/4 teaspoon salt
1/4 teaspoon vanilla
3 cups milk
2 tablespoons cinnamon-sugar mixture
Instructions
Preheat oven to 350 degrees. Cook rice until tender, according to package instructions. In large ovenproof dish, beat eggs. Whisk in vanilla, salt, sugar and milk. Add cooked rice. To prevent rice from sticking to sides, place dish in a larger ovenproof pan filled with 2 inches of water. Bake for 30 minutes. Sprinkle cinnamon-sugar mixture over rice. Bake additional 30 minutes, or until a knife inserted in the middle comes out clean.
