Chocolate Zucchini Cake (CO) Recipe
Ingredients
1/2 cup soft margarine
1/2 cup vegetable oil (or applesauce)
1 and 3/4 cups sugar
2 eggs, beaten
1 teaspoon vanilla
1/2 cup sour milk
2 and 1/2 cups all-purpose flour
4 tablespoons cocoa powder
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
2 cups finely diced zucchini
1/4 cup chocolate chips
Instructions

2 cups finely diced zucchini
1/4 cup chocolate chips
Preheat oven to 325 degrees. Cream together margarine, oil and sugar. Stir in eggs and vanilla. Combine all dry ingredients and stir into sugar mixture alternately with the milk. Add zucchini and desired amount of chocolate chips. Pour batter into a greased and floured 9-by-13-inch baking dish. Sprinkle extra chocolate chips over the top if desired. Bake 40 to 45 minutes until toothpick inserted in center comes out dry.
