Marinated Cheese Recipe
Ingredients
1 (3/4-ounce) envelope dry Italian dressing mix
1/2 cup vegetable oil
1/4 cup white vinegar
2 tablespoons water
2 tablespoons minced green onions
1 1/2 teaspoons sugar
1 (8-ounce) block Monterey Jack cheese
1 (8-ounce) block sharp Cheddar cheese
1 (8-ounce) block cream cheese
1 (4-ounce) jar diced pimentos, drained
Chopped parsley to garnish
Instructions
1/2 cup vegetable oil
1/4 cup white vinegar
2 tablespoons water
2 tablespoons minced green onions
1 1/2 teaspoons sugar
1 (8-ounce) block Monterey Jack cheese
1 (8-ounce) block sharp Cheddar cheese
1 (8-ounce) block cream cheese
1 (4-ounce) jar diced pimentos, drained
Chopped parsley to garnish
1. Combine the dressing mix, oil, vinegar, water, onions, and sugar in a small jar. Cover and shake vigorously until well blended. Set aside.
2. Slice the blocks of cheese into 1/4-inch strips, and halve each strip to form two cubes. Assemble them side-by-side in a 2-quart glass dish, alternating the Cheddar, Monterey Jack, and cream cheese, stacked like dominoes on their sides. Make two rows. Pour the marinade over the top. Cover and refrigerate overnight. Drain and place on a platter. Top with the pimiento and parsley. Serve with crackers.
Yield: about 25 appetizers
