Oatmeal Rolls Recipe
Ingredients
1 cup oatmeal (1/2 cup each quick and old-fashioned)
3 tablespoons soft margarine
2 cups boiling water
2 packages yeast, dissolved in 1/3 cup warm water with 1 teaspoon sugar
2/3 cup brown sugar, packed
1 tablespoon white sugar
1 1/2 teaspoons salt
5 cups all-purpose flour
Instructions

In a large bowl, pour the boiling water over the oats and margarine. Stir and cool to lukewarm. Add sugars, salt and dissolved yeast to oatmeal mixture. Knead in the flour, a cup at a time. Allow dough to rise in a warm place for one hour. Punch down. Form into rolls and place in greased 9-by-13-inch baking pan. Allow to rise again for 20 to 30 minutes. Bake in a 350-degree oven for 20 to 25 minutes, until golden brown.

Tips From Our Test Kitchen: This is an excellent basic recipe for cinnamon rolls. Roll the dough out 1-inch thick after the first rising. Sprinkle with cinnamon and brown sugar. Roll into a pinwheel and cut into 1 1/2-inch rolls. Bake and glaze with icing.
