Fresh Apple Bread (CA) Recipe

Ingredients
4 cups apples, peeled and diced
1 and 1/2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 and 1/2 cups chopped walnuts
2 cups sugar
2 cups flour
2 eggs
3/4 cup vegetable oil
1 teaspoon salt
2 teaspoons vanilla
Instructions
Preheat oven to 350 degrees. Grease and flour two standard-sized loaf pans. Whisk together sugar, oil, eggs, spices, salt, baking powder and baking soda in a large mixing bowl. Stir in flour just until it is evenly mixed. Add apples and walnuts. Stir together until well blended. Pour into prepared loaf pans and bake for 55 to 65 minutes, until center is set.

My 73 yr. old father made this when it first came out in the insert of the local newspaper. It was such a hit with his "kids" (age 49, 50, & 52) that he has to make it all the time. Not to mention his grandkids too! he has to make it special, some like it with nuts and some don't. Every time he makes it, it tastes great! This all from a man who while we were growing up could not boil water! My hat is off to the person who submitted this recipe.
