Zippy Egg Salad Recipe

Ingredients
3 hard-cooked eggs
3 tablespoons mayonnaise
1 tablespoon prepared mustard
1/8 tablespoon salt
1/8 tablespoon pepper
1/8 tablespoon lemon juice
1 tablespoon minced green onion
Instructions
In a small bowl, combine mayonnaise, mustard, salt, pepper, and lemon juice. Stir in eggs with a fork, chopping them into bite-sized pieces. Add green onion. Makes two servings.
Tips From Our Test Kitchen: This tasty egg salad is especially good with fresh garden tomatoes. It’s also great with alfalfa sprouts on a whole wheat bagel.
