Pumpkin Dump Cake (WV) Recipe

Ingredients
1 29-ounce can pure pumpkin
112-ounce can evaporated milk
3 eggs
1 cup sugar
1 teaspoon salt
3 teaspoons cinnamon
1 box yellow cake mix
1 cup chopped pecans
3/4 cup melted margarine
Instructions
Preheat oven to 350 degrees. Mix first six ingredients until well blended, and pour batter into a 9-by-13-inch greased pan. Sprinkle cake mix on top, and then cover with pecans. Pour melted margarine over top. Bake 50 minutes.

I have made this before, and it's very good, but I thought it to be a bit bland. I noticed in the recipe I have that I've made a note to use a spice cake mix instead of yellow, and to use pumpkin pie spice in place of cinnamon. I love these recipes - you can let your imagination out to play!

Pumpkin Cheesecake Frozen Yogurt

3 cups Greek low fat yogurt (such as Fage)
1 ½ cups dark brown sugar
2 cups pureed roasted pumpkin
¾ teaspoon cinnamon
¼ teaspoon nutmeg
½ cup cream cheese, softened in microwave until creamy
1/3 cup heavy cream

1. Whisk all ingredients in a bowl until combined. Place in container of ice cream freezer and freeze according to manufacturers instructions.
