Comments: Love cooking and experimenting with food. Not much of a cook but I'm learning. Prefer to bake a lot of cheesecakes because you can never have to many. Work with Safeway and go hang out with friends at restaurants to try new foods.

Liven up your next cookie swap with these extravagant cookie sticks. They're impressive in size and mimic biscotti in length and crunch. Package in a clear bag and seal with a twist tie. For holiday wrapping, use burlap gift bags tied with raffia and gift tags.

Yield: 1 dozen

* 1 cup firmly packed light brown sugar
* 2/3 cup butter
* 1/4 cup light corn syrup
* 1/4 cup creamy peanut butter
* 1 teaspoon vanilla extract
* 3 1/2 cups uncooked regular oats
* 1 (12-oz.) package semisweet chocolate morsels
* 1 cup butterscotch morsels
* 2 tablespoons shortening
* 1/2 cup creamy peanut butter
* 1/2 cup coarsely chopped peanuts

1.
Stir together brown sugar, butter, and corn syrup in a large saucepan; cook over medium heat until sugar dissolves and butter melts. Remove from heat. Stir in 1/4 cup peanut butter and vanilla. Gently stir in oats. Press into bottom of an ungreased 13" x 9" pan lined with aluminum foil. Bake at 375° for 20 to 22 minutes or until browned.

Melt together chocolate morsels, butterscotch morsels, and shortening in a saucepan over medium heat, stirring until smooth; stir in 1/2 cup peanut butter. Spread over baked cookie crust; sprinkle with peanuts. Let cool in pan on a wire rack 20 minutes. Cover and chill 2 to 3 hours or until firm. (Or pop them in the freezer to speed cooling. Just be sure to let them stand 5 minutes at room temperature before cutting.)

Lift uncut cookies out of pan using foil as handles. Cut crosswise into approximately 1"-thick sticks using a large chef's knife. Wrap in cellophane bags or plastic wrap for gift giving.

Ingredients

* 1 2 oz. package fresh or thawed frozen cranberries

* 2-3 seedless tangerines or clementines (about 8 oz.), rinsed

* 3 tbsp. coarsely chopped, peeled fresh ginger

* 6 tbsp. Safeway Bottled Lime Juice

* 1/2 cup Safeway Clover Honey

Sort cranberries and discard any soft or decayed fruit. Rinse and drain berries.

Cut tangerines in quarters and pick out and discard seeds, if any.

In a food processor, whirl cranberries, tangerines (including peel), ginger, lime juice and ½ cup honey until finely chopped.

Spoon into a bowl and taste. Cranberries are meant to be tart, although if desired add more honey.



Per serving: 90 cal., 1% (1 cal.) from fat; 0.4 g protein; 0.1 g fat (0.1 g sat.); 24 g carbo (2 g fiber); 3.3 mg sodium; 0 mg chol.

do you have a recipe for Pumpkin Pie Ice Cream? A friend of mine used to make his own ice cream all the time. I lost contact with him or I would ask if he had a good recipe for this. Don't know if you have ever had it but Pumpkin Pie ice cream is amazing!
Wow the picture just made my stomach growl. I guess I am ready for lunch. Glad to hear this recipe is easy to make thanks for sharing that. I am a big fan of gumbo but have yet to try making my own. This looks simple.

Pesto-Mozzarella Stuffed Chicken Breasts

* 4 O Organics™ Boneless & Skinless Chicken Breasts (halves; about 1 2/3 lbs. total), rinsed and patted dry
* 1/2 tsp. freshly ground black pepper
* 1/2 cup Safeway SELECT™ Pesto Pasta Sauce
* 1/2 cup Perlini fresh mozzarella balls (or use larger balls cut into small pieces)
* 1/2 cup sliced Safeway SELECT™ Fire Roasted Red Peppers

1. Prepare a charcoal or gas grill for direct, high heat (you can hold your hand 1 to 2 in. above the cooking grate only 2 to 3 seconds; visit our Grilling Essential section for complete instructions).

2. While grill heats, with a sharp knife, cut a pocket lengthwise in the edge of each chicken breast half, taking care to avoid cutting through to the other side. Season chicken pieces on both sides with pepper. Spread about 1 tbsp. pesto inside each pocket, then fill each with 1/4 of the mozzarella balls and 1/4 of the roasted red pepper slices. Rub remaining pesto over exterior of chicken to coat lightly.

3. Place chicken on oiled cooking grate; cover gas grill. Cook, turning once with a wide spatula, until meat is browned and no longer pink in center (cut to test, but do not disturb filling), about 15 minutes total.

I love grilled marinated chicken and grilled salmon...delicious! My mom always has the best recipes for both and we have it often, they're both really good.
