Spinach & Cheese Casserole

"This dish looks terrible when you put it in the oven, but it’s really good. And it’s even better reheated the second day."

Recipe

  • 2 10-ounce packages frozen spinach, thawed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 tablespoons melted butter
  • 6 eggs, beaten
  • 16 ounces cottage cheese
  • 2 tablespoons all-purpose flour
  • 1 pound sharp Cheddar cheese, grated
  • Salt and pepper

Preheat oven to 350 degrees. Lightly grease a 13-by-9-inch baking dish. Drain spinach well. Sauté onion and garlic in 2 tablespoons of the melted butter. Mix spinach with eggs, cottage and cheddar cheeses, flour and the remaining butter. Add sautéed onions and garlic. Season with salt and pepper. Pour into prepared dish and bake for 1 hour. Serves 8 to 10.
