Irish Soda Bread

Irish Soda Bread

Ingredients
5 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1½ teaspoons salt
½ cup (1 stick) cold unsalted butter, cut into small pieces
2½ cups raisins
3 tablespoons caraway seeds
2½ cups buttermilk
1 egg, beaten

Instructions
1. Preheat oven to 350F. Grease two 9 x 5-inch loaf pans.
2. Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Cut in butter using two knives or a pastry blender until mixture is the texture of cornmeal.
3. Add raisins and caraway seeds; mix well. Add buttermilk and egg and stir until just blended.
4. Divide batter evenly between prepared pans. Bake 50 minutes, or until golden. Cool on a wire rack for 10 minutes before removing from the pans to cool completely.
Serves 20.

I love to collect recipes for Irish soda bread. So when looking at this recipe, I could tell that there was not enough liquid (buttermilk) listed. I also noticed that it was printed as "1/2 cups". I assumed there was an error. Fortunately I came here to the website site for the first time and was able to get the correct recipe. I can't wait to try it.

I too tried the Irish Soda Bread recipe and immediately saw that there wasn't enough liquid, so I added more buttermilk. Later I thought to google the recipe, I was glad to find it on line. I liked the recipe, and I am sure the exact amount will make it even better.
