Brown Bag Sandwiches
Has Sad Sack been pulling K.P. duty at your house? The same old bread, the same old spread, the same old tuna salad sandwich or PB&J packed up as a brown bag lunch—surely these bland sandwiches are the handiwork of the bumbling soldier of comic strip fame. This week, American Profile offers two delicious sandwich recipes guaranteed to banish Sad Sack from your kitchen.The beauty of sandwich recipes is that they're simply a road map to good taste. Don't like avocado? Layer on some sliced tomato instead. Want to watch your fat grams? Skip the bacon. Don't like arugula? Try butter lettuce or baby spinach.

Avocado and Turkey Sandwiches with Feta Mayonnaise
Ingredients
Lemon Mayonnaise:
1/4 cup light mayonnaise
2 tablespoons crumbled feta cheese
2 tablespoons lemon juice
2 tablespoons chopped cilantro
Sandwiches:
8 slices of rustic bread
4 lettuce leaves
3/4 pound sliced smoked turkey
4 slices cooked bacon
8 tomato slices
2 large ripe avocados
Juice of 1 lime
1/4 teaspoon salt
Coarsely ground black pepper
Instructions
1/4 cup light mayonnaise
2 tablespoons crumbled feta cheese
2 tablespoons lemon juice
2 tablespoons chopped cilantro
Sandwiches:
8 slices of rustic bread

1.To prepare mayonnaise, combine mayonnaise, feta, lemon juice and cilantro in a small bowl. Stir until well blended. 2. To prepare sandwiches, spread lemon mayonnaise on each slice of bread. Layer lettuce, turkey, bacon and tomatoes on 4 slices of bread. 3. Slices avocados and place on remaining slices of bread. Sprinkle with lime juice. Season with salt and pepper. Close sandwich halves. Serves 4.

Roast Beef Sandwiches with Horseradish
IngredientsSauce:
1 tablespoon prepared horseradish
tablespoon sour cream
Coarsely ground black pepper
Sandwich:
1 whole-wheat ciabatta roll
1 slice smoked provolone
1/2 ounce arugula
1/4 pound thinly sliced deli-style roast beef
1. To prepare sauce, combine horseradish, sour cream, salt and pepper. Mix well.
2. Spread both halves of ciabatta roll with horseradish sauce. Layer bottom half with roast beef, cheese and arugula. Top with remaining roll half. Serves 1.
