Banana Cake
I found this recipe years ago in the newspaper. I have made it a lot for potlucks. People always ask me for the recipe. I hope your readers like it too.Recipe
For the cake:
- 2 medium very ripe bananas, mashed
- 1 cup flour
- 3/4 cup chopped walnuts
- 2/3 cup sugar
- 1/4 cup cornstarch
- 1/3 cup vegetable oil
- 1 egg, slightly beaten
- 1tablespoon orange juice
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/4 teaspoon salt
Preheat oven to 350 degrees. Mix dry ingredients. Stir in remaining ingredients. Pour into greased and floured 8-by-8-inch baking pan. Bake for 30 minutes or until toothpick comes out clean when poked into cakes center. Set aside to cool before icing.
For the frosting:
- 1/3 cup soft butter
- 1 1/2 cups powdered sugar
- 1 tablespoon orange juice
- 1 tablespoon grated orange peel
Combine all ingredients, mix until fluffy, and spread on cake.
