Terrific Tree Salad

The trees on my grandmother’s lush property always reminded me of broccoli. She made up this summertime favorite as a way to celebrate my childhood imagination.

Recipe

• 2 bunches broccoli, trimmed and chopped
• 8 strips crumbled bacon
• 1 cup raisins
• 1/2 cup chopped onion
• 1/2 cup slivered almonds
• 1 cup mayonnaise
• 2 teaspoons red wine vinegar
• 3 teaspoons sugar

Mix all ingredients and chill salad in refrigerator overnight before serving.

Tips From Our Test Kitchen: For a lower fat version of this tasty salad, use only four strips of bacon and substitute plain yogurt for the mayonnaise.
