Good 'n' Fillin'
This recipe was thrown together one weekend when I needed something for my husband and son, who were coming home from an all-day fishing trip. They liked it so much it has become a requested favorite.Recipe
- 1 pound smoked sausage, sliced
- 1 large onion, cut into short, thin strips
- 2 large green peppers, cut into short, thin strips
- 3 tablespoons vegetable oil
- 1 16-ounce can tomatoes and green chilies
- 2 16-ounce cans black-eyed peas, drained
- 1 cup corn muffin mix
- 1/4 teaspoon ground cayenne pepper
- 2/3 cup milk
- 1 beaten egg
Preheat oven to 400 degrees. In large skillet over medium heat, cook sausage, onion, and green pepper in 1 tablespoon oil until vegetables are tender and sausage is done. Stir in tomatoes and peas; reduce heat and simmer for 5 to 10 minutes. Pour into lightly sprayed 13-by-9-by-2-inch baking dish. In a small bowl, combine corn muffin mix, cayenne, milk, egg, and remaining 2 tablespoons oil. Stir until smooth. Pour over sausage mixture. Bake 25 to 30 minutes or until golden brown. Serves 4 to 6.
Tips From Our Test Kitchen: For more spice in this dish, add a splash of hot sauce.
