Pecan Pie Muffins

A friend gave me this recipe when she was visiting us. I tried it and have been making it ever since. Everyone who eats it wants the recipe, so I will just share it with everyone else at American Profile. The secret, of course, is in using real butter.

Recipe

  • 1 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 2/3 cup melted butter (I use salted butter.)
  • 1 cup chopped pecans

Preheat oven to 350 degrees. Mix all ingredients in a bowl with a wooden spoon. Pour into a greased mini-muffin pan, filling each cup 2/3 full. Bake 12 to 15 minutes. Makes 2 1/2 to 3 dozen.

Tips From Our Test Kitchen: Garnish each muffin with a pecan half.
