Ham Bone and Pea Soup
One of the best times I recall growing up in New England during our cold and snowy winters was coming home from school to my moms ham bone and pea soup. Its easy to prepare, and you get to make use of the bone from your baked ham dinner.Recipe
- 1 ham bone (with some meat on it)
- 1 small onion, thinly sliced
- 3 large potatoes, cut in small chunks
- 1 cup dried split peas (green or yellow, or 1/2 cup of each)
- 1 bay leaf
In a large soup pot, cover ham bone, peas, and onion with water. Boil over medium heat until ham is soft and falls off the bone. Remove bone and ham. Cut ham in small pieces and return to pot. Add potatoes and bay leaf. Cook until peas and potatoes are tender. Serve with hard rolls for dunking or make dumplings.
Tips From Our Test Kitchen: This is a very simple and good soup. Add salt and freshly ground pepper, to taste.
