Pineapple Drop Cookies

My two sons love these cookies. It’s a recipe handed down from my mother and is quick and easy. She was my sons’ “Nanny,” so they would ask for “Nanny’s Cookies.” She died when my oldest son was only 3, but I guess this was one of their ways of remembering her.

Recipe

  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 cup drained, crushed pineapple
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Preheat oven to 375 degrees. Using an electric mixer, cream shortening and sugar. Beat in egg, vanilla, and pineapple. Sift flour, baking soda, and salt together, and gradually add to creamed mixture. Drop by teaspoons on an ungreased cookie sheet, flattening each slightly with fingers. Bake 12 to 15 minutes. Makes about 3 dozen.
