Ingredients
Cookies:
1/2 cup vegetable oil
1 cup sugar
1/2 cup cocoa powder
1 cup milk
1 egg
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
Filling:
1 cup solid vegetable shortening
2 cups confectioners’ sugar
2 cups marshmallow crème
1 teaspoon vanilla extract
3 to 6 tablespoons milk
Instructions
Beat the oil, sugar, cocoa, milk, egg, flour, baking soda, salt, and vanilla together until well mixed. Refrigerate for about 1 hour.
Preheat the oven to 425 degrees. Drop the dough, one teaspoon at a time, onto an ungreased cookie sheet. Bake 5 to 10 minutes. Watch them carefully to prevent burning. While the cookies cool, make the filling.
Beat the shortening, sugar, marshmallow crème, vanilla, and 3 tablespoons of the milk together until fluffy. Add more milk if needed. Spoon a generous dollop of filling on half of the cooled cookies (on the flat side). Place another cookie on top of each to make a sandwich.
Yield: about 40 cookies

Nice to see a good recipe for whoopie pies that doesn't include vegetable shortening... transfats.. ugh! However, I'd still like to find someone who can figure out what makes THESE
whoopie pies so good -- they're absolutely scrumptious, moist, delicious and much more wholesome tasting than many other recipes... any ideas?
