Cooking with Kids

Summer vacation leaves many school-age children with hours of nothing to do. Why not bring them in the kitchen and enlist their help in making some tasty treats for the family?Theresa Slemp of Afton, Tenn., sent us her recipe for Molasses Cookies. “I’ve always been fascinated with my family history and cooking, and combining the two just seemed natural. This is my great-grandmother’s recipe,” she says. “The cookies have an old-fashioned flavor that reminds me of sitting in my grandmother’s kitchen.”
Your kids can help you drop dough onto the baking sheets and slightly flatten the dough with the bottom of a glass before sliding the cookies into the oven.
Gwen Swanson of Pukwana, S.D., prepares her Nutty Apple Dip for her grandchildren. “This recipe makes a quick and healthful appetizer. It’s a fun change of pace,” she says. Kids will enjoy stirring peanuts into the cream cheese mixture, but most of all, they’ll love dunking apple slices into the nutty dip and tasting the results of their work.

Nutty Apple Dip
Ingredients1/2 cup applesauce
1/4 cup packed brown sugar
1/2 teaspoon vanilla extract
1/2 cup chopped salted peanuts
3 apples, sliced
blended. Stir in peanuts.
2. Serve with apple slices. Refrigerate leftovers. Yield: 2 cups.
Add 1/4 cup of golden raisins if desired.
Molasses Cookies
Ingredients1 cup sugar
1 teaspoon baking soda
½ teaspoon ground allspice
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon kosher salt
½ cup vegetable shortening, melted and cooled
1 large egg
¼ cup unsulfured molasses
¾ cup old-fashioned oats
2. Sift together flour, sugar, baking soda, spices and salt. Add melted, cooled
shortening, egg and molasses; mix well.
Stir in oats.
3. Drop dough by tablespoonfuls onto an ungreased baking sheet. Flatten with bottom of a glass that has been dipped in sugar. Bake 8 to 10 minutes.
Yield: 2 dozen.
