Cool Fruit Salad
Cool Fruit Salad
by Martha Larsen-Van Auken
I am 85, and the following recipe has been in my family for many years. My mother made it when I was very young. Now, every time there is a family gathering, this is always served as a salad.
Recipe
- 1 pint whipping cream
- 1 8-ounce can crushed pineapple, drained
- 1 6-ounce jar maraschino cherries, drained and halved
- 2 chopped bananas
- 3/4 cup small marshmallows
- 2 tablespoons mayonnaise
- 1 tablespoon sifted powdered sugar
Whip cream and fold in fruits and marshmallows. Mix powdered sugar and mayonnaise and add to fruit mixture. Freeze in flat 9-by-10 inch pan. Cut in squares and serve on lettuce leaves.
Tips From Our Test Kitchen: This sweet salad can be frozen in a flat dish to make individual square-shaped servings or in a loaf pan to be served in slices.
