Pa's Pea Salad

Pa's Pea Salad
My father seldom did anything in the kitchen. This salad was about the only dish he ever prepared. He loved nuts. We loved his salad.

Recipe

  • 1 10-ounce package of frozen snow peas or sugar snap peas (cooked 2 minutes)
  • 1 10-ounce package of frozen small peas (thawed)
  • 1 cup cashews
  • 1 cup chopped cauliflower
  • 1 cup low-fat salad dressing
  • 1/2 cup low-fat sour cream
  • 1/3 cup diced red onion
  • 1/3 cup diced celery
  • 1/4 cup crumbled bacon

Mix all ingredients except bacon in large bowl and chill for at least two hours. Garnish with bacon. Serves six.
